Diana (Schroedl) Lahti was born April 5th, 1951, to Marjorie and Frank Schroedl of Minneapolis. She grew up in a large, closely-knit family in southeast Minneapolis near her aunts, uncles, cousins, and beloved grandparents, (Helen and Joseph Schroedl); and great grandparents, (Bertha and Andy Nergord). Diana attended St Lawrence Catholic School and graduated from John Marshall High School in Minneapolis in 1969. In 1976 Diana married Dennis Lahti of Kelly Lake, Minnesota. Diana and Dennis have 3 daughters, Tina Lahti (Gregory Vath), Angela Lahti (Ricky Prescott) and Jessica Jensrud (Chad); and 5 grandchildren, Devin, Kai, Korey, Gunnar, and Luca.
Diana was a long-time parishioner at St Lawrence Catholic Church and a member of the Altar Rosary Society. In 1986, Diana and Dennis moved to Spring Lake Park Minnesota where they lived for 32 years. During those years Diana worked at Jerry’s New Market in New Brighton and later at Unity (now Mercy) hospital in Fridley.
As a young person, Diana enjoyed spending time with her parents, at the family cabin as well as boating, water skiing, horseback riding, snowmobiling, and bowling at Stardust and Mady’s in Minneapolis. She was a hula hoop contest champion and could hold a hoop up indefinitely, well into her 60s. As she and Dennis became grandparents, they enjoyed time with their perfect grandkids, more frequent travel, and continued visits to the family cabin on Gull Lake.
Throughout her life, Diana valued generosity, honesty, loyalty, and kindness. She was always interested in a fun new activity, adventure, or discovery. She loved Halloween, Christmas, the Minnesota State Fair, a good thrift store bargain, and enjoying great food with family and friends. Diana’s love of food drove her to acquire a massive collection of cookbooks, as well as hundreds of cooking tools, implements, and accessories. Friends and family never left her house with an empty stomach and she rarely finished a meal without discussing what to have for the next one.
Diana passed-away at home in Coon Rapids on October 21st with Dennis by her side. She is deeply loved, and her family will miss her greatly.
